Erythritol can be used as a substitute for sugar, including in baking. It is 60%-70% as sweet as regular sugar. Erythritol is obtained from the fermentation of glucose from organic cereals to which a specific yeast is added, this means that we obtain a natural product, with 0% calories, 0% added sugars and a low glycemic index.
